Paes de queijo with Comté cheese

Ingredients for 40 rolls

  • 400g grated Entremont Comté cheese
  • 500g tapioca flour
  • 25cl milk
  • 5cl groundnut oil
  • 4 eggs
  • 2 tsp salt

Preparation

Mix the milk and oil in a pan and bring to the boil. Take off the heat and preheat the oven to 180°C (th. 6).

Mix the flour and salt, the pour the milk/oil mixture over it and beat vigorously (use a food processor if need be).

Add the eggs and grated Entremont Comté cheese and mix again.

Roll the dough into small balls about the size of a conker and place on a baking tray. Cook in the oven for 15-20 minutes (the paes should be round and golden brown) and serve 5 minutes after taking them out of the oven.

• "Paes de queijo" are traditional Brazilian cheese buns. They can be eaten at any time of day, including for breakfast, but in France we would tend to eat them as appetisers.
