Tartar of Entremont Saint Mont des Alpes cheese and courgettes
Ingredients
- 2 courgettes
- 150g Entremont Saint Mont des Alpes cheese
- 1 red onion
- 1/2 bunch fresh basil
- 2 limes
- 10cl olive oil
- Salt and pepper
Preparation
Cut the courgettes, red onion, and 100g of Entremont Saint Mont des Alpes cheese into small cubes of about 0.5cm and mix them together.
Finely grate 50g Entremont Saint Mont des Alpes cheese. Spread the grated cheese to form 4 circles on greaseproof paper and bake for 5 minutes at 180°C. The tuiles are ready when they are browned around the edge.
Season the tartar of Entremont Saint Mont des Alpes cheese with olive oil and the juice and zest of 2 limes. Salt and pepper to taste.
Serve in a ramekin, sprinkle with fresh basil and red berries, and top with a Entremont Saint Mont des Alpes tuile.
